Hello from Raleigh, NC. I was in NZ in Dec and it's just lovely. 
What I noticed about the weather in your area is how mild it is,
neither too hot nor too cold and mostly moist. Do you think that someone
working in a place with wider temp/humidity variations can duplicate what 
you do in a controlled environment, like a glass case indoors or a cold
frame
in spring when weather is between 5 and 25C? 

Do you have pictures of your setup online? I'd love to take a peek...If you
