My question is when should I water it?

I potted it but I am unclear as to when to start watering. I read that it is
a winter grower, but I am not sure if they mean 'winter' as in the southern
hemisphere, or northern.

Paul Christian usually supplies material that is on a Northern hemisphere
schedule, water once and wait. They require superior drainage and the
majority of the bulb should be exposed.
Last year I had a tingling reaction after cleaning the bulbs of dried tunics
and leaves, no doubt from the alkaloids. Normally I would split them with
bare hands, this year put on disposable nitrile gloves. Wouldn't want to have
Freddi find me twitching in the corner of the greenhouse, or worse.
