It's a granite sand, coarse, washed, and screened to be fairly uniform.  It's used for getting uniform texture on a plaster wall.

An important feature is that it comes in 50 lb plastic bags, which are much easier to lift than the normal 80 lb paper bags, and the plastic bags don't leak all over the back of my car.
