Thanks for mentioning the role of oxalates in the diet and disease. There are many medical conditions that may be related to oxalate intake.

The Oxalates are there for a reason to prevent someone or something from eating the plant material.

There is some thought that the recent use of soybeans in many food products has increased the intake of oxalates and therefore increase the occurrence of some diseases.
