I have had good luck with similar treatment as you describe. I dig them 
and let them dry off and place them in supermarket plastic bags with 
commercial potting soil or seed starting mix and  couple of squirts of 
water.  I check once or twice during the winter to make sure they don't 
desiccate.  If the tubers are plump I leave them if they are looking 
shriveled I add a bit of water.  They are stored at about 45 F to 50 F.  
Very similar to the way  I treat dahlia tubers.  Of course the trick is 
to over winter some alocasias or colocasias.
