I like to eat salads but lettuce doesn't keep that long. Shredded cabbage
makes a wonderful salad and keeps in the refrigerator crisper for at least
a week. Here's a salad suggestion:

Shredded cabbage (any color)
Dried tomato bits
Pignoli (pine nuts) or almonds or walnuts
Golden raisins
Dressing: Olive oil, balsamic vinegar, dash of Angostura bitters
Sprinkle with freshly-grated Parmesan
