From a botanical perspective many flowers ripen pollen at an earlier time than they are receptive.  This prevents self fertilization.

One rough idea is that when the flower is producing pollen it is not 
receptive to it. Sometimes you can see changes in the flower which 
indicate when it is receptive.

I see to recall Ian Young (SRGC Bulblog) discussing when the best time 
for pollinating various bulb flowers is.
