Saffron is a long-domesticated plant which is sterile, so it doesn't
form seeds.

It is a selection from a fall-blooming species of crocus, but for the
life of me I can't remember which one.

PS regarding Amish saffron: I've read (and I only read authoritative
sources of info) that the Amish raise C. nudiflorus as saffron, with a
patch by the back steps for Papa to urinate on, before going in, so they
grow well. This is not "true" saffron, but it seems to suit the Amish.
